How It All Began
Nick and Rena Carson got married in 1958. Rena came from a family of farmers and Nick was a good ol' Catholic boy from El Paso. The two met at a football game in Hatch, NM. As time went on, Rena went to work for the FBI in Washington, DC and Nick went to work for the Railroad Company. Rena quickly learned that the city life was not for her and came back to New Mexico because she wanted to farm. As years passed on the two reconnected and got married. They started farming a small farm right away and began to grow over the years. They have four children, Robert (Bruno), Rosie, Rory and Kit. All four are actively involved in the farming business as well as many of the grandkids. Rosie, married Joe Paul Lack. They own Lack Farms and San Mateo Enterprises, which is one of the two dehydrating facilities that provide raw materials to Rio Valley Chili. Kit Carson Farms is the second dehydrating facility, which is owned by Nick and Rena and their three boys.
Rio Valley Chili began in 1996. Nick and Rena Carson took it over in 1997. This allowed for many doors to open.
