Chili Pepper
Chili Peppers are used primarily to impart heat or pungency, as well as ASTA color, to a finished food product. The “heat level” is measured in terms of “Scoville Units.” The definition of the term Scoville Units has been developed by the American Spice Trade Association. Scoville heat is measured and recorded for each lot of mill and wet-down product. The mildest Scoville is 0 and the hottest in chili can exceed 300,000 Scoville Heat Units (SHU). Chili Peppers sold by Rio Valley range from 750 to 2,500 SHU. As orders for finished goods are received our software allows the operations department to select specific lots that contain the quality attributes that will allow plant personnel to blend what the customer wants. Our finished Peppers are named after Saints, such as San Marcos.
