Paprika
Paprika is a mild chili pepper, without noticeable pungency, used primarily for the color it imparts naturally. The color is a measurable physical property of the chili. The definition of this attribute, and the methods used to measure and record test results, are defined by the American Spice Trade Association or ASTA. It is this “level of color” or ASTA that we sell when we sell Paprika. Rio Valley sells Paprika in a range from 85 ASTA to 160 ASTA. Normally, the higher the ASTA unit, the more valuable the product. Paprika is found in many sausage and cold cut applications. In our literature, the Paprika is named for its ASTA level, such as 100 ASTA or 120 ASTA.
